Our selection is also heavily influenced by South Indian cuisine from the culinary schools of Karnataka, Andhra, Hyderabad, Tamil, Chettinad, and Kerala – all reflecting a brilliant blend of flavours, colours, seasoning, nutritional balance, fragrance, taste, and visual appeal.
The cuisine will cover the coastal areas that have a large repertoire of seafood; cuisine from the kitchens of the Nizams and also cuisine from the deep southern region of Tamil Nadu, Andhra and Kerala. The attempt is to have a perfect blend of North Indian ingredients with South India seasoning.

The India cuisine will also evolve around menu items that will create innovate contemporary presentation styles. Focus will be on fresh seafood cooked in various coastal forms. The base choice has been developed after research of the Singapore culinary choice with continuous intention of innovating new trends & tastes. There is a market segment which is in very close proximity to Clarke Quay that prefers to eat quick lunches. Our plan is to have an express lunch for this market segment with a lavish yet elegant cum quick Buffet system. In focus too is the exploration of Outdoor catering services in the near future.
